Lara walnuts are grown in Veneto, in north eastern Italy. To make this preserve theyre harvested when young, or green. Young walnuts tend to be quite bitter, with almost tannin like notes. When candied in syrup the bitterness is balanced out and they take on a tender texture. The candied walnuts pair well with roast pork and duck.
