2022 Seven Acre Shiraz Sparkling Cellaring suggestion: 8 - 10Planted in 1993, the vines grow on hard red brown clay laced with bluestone slate. Eighteen rows stretch 500 metres each, with the lower sections dipping into sandy alluvial loam and the upper rows anchored in richer veins of bluestone. The clay naturally limits yields, concentrating flavour while preserving elegance, while the bluestone imparts a mineral, almost graphite like edge to the tannins. Matured exclusively in French oak, with 20% new oak.
